Bunny Foxhoven, RDN, CDCES
Director of Nutrition Services
Bunny received her Bachelor's degree at Colorado State University and then completed her Clinical Nutrition Dietetics internship at the Indiana University Purdue University at Indianapolis Medical Center campus. She is an accredited Registered Dietitian Nutritionist with the Academy of Nutrition and Dietetics and is a Certified Diabetes Care and Education Specialist with the Certification Board for Diabetes Care and Education. Bunny specializes in Diabetes care and education, Cardiovascular disease prevention and Sports Nutrition. Bunny is an avid cyclist, runner and water skier.

Deanna Ronne RDN CNSC CCS
Pediatric Neonatal Nutrition
Deanna received her Bachelor of Science degree in Nutrition and is currently enrolled in a master’s degree program in Clinical Nutrition at the University of Wisconsin – Madison. She is a Certified Nutrition Support Clinician and Small Baby Care Specialist with advanced training in pediatric and neonatal nutrition. Deanna has spent much of her career practicing in high level NICUs leading quality improvement projects and conducting clinical research on optimizing nutrition in infants that have undergone intestinal surgery. Outside of work, Deanna enjoys going on runs/hikes or playing fetch with her black golden retriever, Bella, and cooking with her friends and family.

Samantha Guittard, RD
After graduating with her Bachelor degree in Food Science & Nutrition from the California Polytechnic University in San Luis Obispo, CA, Samantha has explored various aspects of nutrition before continuing on to complete her Dietetic Internship with the University of Houston. Some of those roles include working as a site supervisor in a senior dining program, teaching foundational cooking skills to adolescents and teens, and gaining diet office experience as a Dietetic Technician, Registered in the acute care setting. Since earning her RD credentials in 2020 she has worked as a clinical dietitian in the in-patient setting where she gained experience in the provision ofnutrition care in the areas of critical care, oncology, diabetes, congestive heart failure, liver failure, and more before recently transitioning to outpatient nutrition services. Currently she is developing her skills in weight management and bariatric nutrition counseling. She loves animals (especially her cat), and in her free time she loves hiking, jogging, cooking, having delicious food with good people, and gardening.

Staci Moore, MS, RDN
Staci is an alumna of Metropolitan State University-Denver, CO where she earned her Bachelor’s degree in Human Nutrition-Dietetics, then completed her dietetic internship with Sodexo. As a Registered Dietitian Nutritionist with the Academy of Nutrition and Dietetics, Staci finds passion in working with adult oncology as well as solid organ transplant patients. Outside of work Staci enjoys cross country skiing, yoga, and endless hikes with her husband and two dogs. Staci’s nutrition mission is to make meaningful change, however small, through the power of nutrition.

Kelsey Keenan, MS, RDN
Kelsey earned her Bachelor of Science degree in Nutrition and Foods from Appalachian State University in Boone, North Carolina. She returned to Appalachian State to complete her combined Master of Science in Nutrition with Dietetic Internship. As a Registered Dietitian with the Academy of Nutrition and Dietetics working in clinical nutrition, Kelsey is passionate about using evidence-based nutrition interventions to help improve the quality of life for patients with a variety of chronic conditions. Outside of work Kelsey enjoys cooking, eating, and spending time with her family.

Sierra Wineinger, MS, RDN
Sierra received her Bachelor's degree in Nutrition from Eastern Michigan University and completed her dietetic internship in El Paso, Texas. Sierra recently finished her MBA from Liberty University. As an accredited Registered Dietitian with the Academy of Nutrition and Dietetics, Sierra has worked in the inpatient and outpatient setting with both adult and pediatric patients. Sierra and her family are originally from Arizona. In her spare time, Sierra enjoys being outdoors and going on runs.

Wendy Nevarez, MS, RDN, LD
Wendy holds a Bachelor of Science degree in Dietetics from the University of Delaware and completed her combined Dietetic Internship and Master of Science Degree in Family and Consumer Sciences at New Mexico State University. As an accredited Dietitian through the Academy of Nutrition and Dietetics, her nutrition philosophy is that eating should be enjoyable. She is highly experienced in pediatric and adult renal nutrition, diabetes management, and general wellness. In her free time, Wendy enjoys coaching figure skating, hiking, amateur DIY projects, and spending time with her family.

Amber Oberlin, RDN
Amber Oberlin is a registered and licensed dietitian nutritionist with experience in neonatal and infant nutrition, pediatric nutrition, bariatric nutrition, cardiovascular nutrition, menopause, and tube feeding (enteral) nutrition. She holds a Master’s of Nutrition from East Carolina University, Certificate of Training in Adult Weight Management, and is a Board Certified Nutrition Support Clinician. Amber also teaches a variety of nutrition and dietetics classes across the lifecycle as an adjunct professor. Amber’s passion is to make nutrition approachable to all.
Amber is a Veteran of Operation Iraqi Freedom 2003 and currently resides in San Antonio. In her spare time Amber loves to run, read, hunt, and watch movies with her children.

Emily Newman, MS, RDN, LD
Emily is a Registered Dietitian Nutritionist with the Academy of Nutrition and Dietetics. She earned her Bachelor of Science in Dietetics from Bowling Green State University in Bowling Green, Ohio. She then completed her Dietetic Internship and Master of Science in Nutritional Sciences through Oklahoma State University in Stillwater, Oklahoma. Emily has worked in a variety of inpatient and outpatient settings. She has experience with weight management, cardiovascular disease, diabetes, digestive issues, and more. In her free time, Emily enjoys being outside and staying active with her daughter and husband. Her favorite activities are hiking, bike riding, and camping.

Amanda received her Master of Public Health degree from the University of Michigan with concentrations in Nutritional Sciences and Health Behavior & Health Education. She has experience in both inpatient and outpatient settings with a focus on diabetes, weight management, and behavior change. Outside of work, Amanda loves cooking up new recipes, checking out new coffee shops, and exploring the outdoors of Colorado.

Mylinh Nguyen, MS, RDN
Mylinh Nguyen, RDN earned her Bachelor of Science degree in Food and Nutrition Summa Cum Laude from The University of Alabama and a Bachelor of Science degree in Psychology from The University of Houston. As a Registered Dietitian with the Academy of Nutrition and Dietetics working in clinical nutrition, she provides tailored nutritional care and educates diverse groups to help improve the quality of life for patients with a variety of chronic conditions. Her clinical interests include cardiovascular disease, oncology, bariatrics, and working with the geriatric population. When not at work, Mylinh enjoys skating, going to farmers markets, traveling for food, and gardening.

Elizabeth Moore has been in the customer relations field for over 30 years. Many have been spent in the medical and dental fields. As a diabetic for over forty-five years, she is very interested in nutrition and health management and has enjoyed being a part of Denver Wellness and Nutrition for the past year.

Elsa Bermudez-Riley, RDN, CHC
Elsa has been a practicing Registered Dietitian Nutritionist for nearly 15 years. She has spent most of her career working in acute critical care and long-term care. She has experience as a clinical nutrition manager for both acute rehab and SNF facilities. As a Dietitian for Sodexo’s Nutrition and Wellness Center, her focus is outpatient care specifically the Spanish speaking population where she can utilize her bilingual skills. Growing up in a Latino household she understands the cultural barriers that affect Latino health, and she strives to help this community maintain a healthy lifestyle without sacrificing their culture. She is a mother of 5 alongside her husband, who is also a Registered Dietitian Nutritionist.
Elsa completed her Bachelor of Science in Human Nutrition & Food Science with a minor in Latin American Studies at California State University, San Bernardino and is an Evidenced-Based Certified Health Coach through the National Society of Health Coaches.

Catherine Fore RD, LDN, CNSC
Catherine holds two Bachelor of Science degrees: Health and Exercise Science from Furman University and Food Science with a focus on Human Nutrition and Dietetics from Clemson University. She is a native of South Carolina and moved to Maryland more than 20 years ago to complete her dietetic internship with Sodexo. As an accredited Registered Dietitian with the Academy of Nutrition and Dietetics, Catherine has spent most of her career working extensively in the specialty of metabolic and bariatric surgery with programs in Maryland, Washington, DC, Texas, and Colorado. She is also credentialed as a Certified Nutrition Support Clinician. In her free time, Catherine can be found on the sidelines cheering for her three children as they compete in soccer, lacrosse, field hockey, swim, and Irish dance. In addition, she is a co-leader for her daughter’s Girl Scout troop.

Jennifer Burnett
Jennifer is a Registered Dietitian Nutritionist who received her Bachelor of Science degree from University of Northern Colorado and completed her dietetic internship through Wellness Workdays in Hingham, MA. Jennifer is an experienced inpatient clinical dietitian and provides care for adults with a variety of conditions including diabetes, cardiovascular disease, gastrointestinal disorders, renal disease, etc. She finds passion in providing nutrition support in the form of tube feedings and TPN. In her spare time, Jennifer enjoys spending time outdoors with her husband and two children.

Maggie Gallagher
Maggie is a registered dietitian nutritionist originally from Albany, New York. She completed her supervised practice hours to become a registered dietitian through MSU in Denver, where she has since pursued a career in nutrition and immersed herself in the Denver community. She received her Masters Degree in human nutrition from Russell Sage College in Troy, NY, preceded by a Bachelors degree in kinesiology with an emphasis in health and human performance from St. Mary’s College of California.
She is most passionate about the medicinal, cultural, and physiological aspects of what we eat and hopes to empower others in learning how to fuel our bodies and maximize our ability to utilize food as medicine. Maggie’s strengths include motivational interviewing, disease management, and counseling clients on how to make eating healthy, practical, and fun. She has also conducted extensive research on the microbiome, exercise physiology, and nutrition through the lifespan.
In her spare time, Maggie enjoys cooking/baking, playing violin, exploring local parks in Denver as well as any form of physical activity- particularly hiking, yoga and barre classes!

Rebecca earned her Masters of Science in Applied Nutrition from the University of New England. She has also studied functional medicine nutrition and is an Integrative and Functional Nutrition Certified Practitioner. Rebecca’s passion lies in harnessing the power of nutrition in the prevention and management of disease. Beyond nutrition, Rebecca’s background lies in working in sports medicine as a Certified Athletic Trainer. She also enjoys helping people understand which foods can help properly fuel their body for optimal athletic performance. Outside of work, Becca can be found mountain biking, camping, and hiking, all with her pup in tow.

Natasha Rumsey RDN, LDN, ACE
Natasha holds an Associate Degree in Occupational Studies in Personal training and is an accredited Personal Trainer through the American council on Exercise. She continued her education and earned a Bachelor of Science Degree in Human Nutrition and Dietetics from MSU of Denver. She then completed her post-graduate nutrition internship through Sodexo’s Distance Internship. As an accredited Registered Dietitian Nutritionist with the Academy of Nutrition and Dietetics, Natasha enjoys tailoring nutrition and wellness recommendations to individual’s needs. Her areas of emphasis are in Type 2 Diabetes, cardiovascular disease, and geriatric care. In her free time, she enjoys all warm-weather activities and exploring new places. Despite being a native of Colorado, she’d prefer to live somewhere similar to Hawaii.
